Kodo Millet Dahivada is a healthy and flavorful twist on the traditional Indian snack, where deep-fried lentil vadas are replaced with nutrient-rich Kodo millet dumplings. Kodo millet, packed with fiber, protein, and essential minerals, makes this dish a gluten-free and guilt-free indulgence. The millet is soaked, ground, and shaped into vadas, which are then lightly fried or steamed for a healthier option. These vadas are soaked in spiced yogurt, seasoned with a tempering of mustard seeds, curry leaves, and green chilies, and garnished with coriander leaves and a sprinkle of roasted cumin powder. The result is a refreshing, tangy, and satisfying snack or appetizer, perfect for festive occasions or as a cooling treat on a warm day.

Ingredients
  • 1 bowl kodo millet
  • 1 bowl sabudana
  • 4 boiled potatoes
  • 1/2 tsp ginger paste
  • 1/2 tsp green chilli paste
  • Sindhalu salt to taste
  • 1 tsp sugar (Substitute with jaggery if diabetic)
  • 1/2 tsp garam masala
  • 3/4 tsp amchur powder
  • 3 tsp coriander chopped
  • 2 cup sweet dahi
  • 1/2 cup tamarind chutney
  • 1/2 cup green chutney
Instructions
  1. Boil the potato and soak sabudana for 5-6 hours. Soak kodo millet for 2-3 hours. Drain excess water from kodo millet. Add all the ingredients. Smash soaked millet with fingers and add.

  2. Mix all other ingredients to that. Make a tasty stuff. Make small vadas and fry them on medium heat.

  3. Take vada in a bowl put sweet dahi both chutney and serve. It's a crispy vada and farali also.
