Green tea Smoked Sprouted Ragi Cutlets

Green Tea Smoked Sprouted Ragi Cutlets are a nutritious and flavorful snack that combines the goodness of sprouted ragi with the subtle smokiness of green tea. Sprouted ragi, rich in calcium, iron, and fiber, forms the base of these cutlets, offering a wholesome alternative to traditional ingredients. The cutlets are infused with a delicate smoky aroma by exposing them to green tea smoke, enhancing their depth of flavor. Spiced with herbs, mashed vegetables, and aromatic seasonings, they are pan-fried to perfection for a crispy outer layer while remaining soft inside. Served with mint chutney or yogurt dip, these cutlets make for a healthy, gluten-free, and protein-rich treat.

Ingredients

  • For cutlet:
  • 1/4 cup Sprouted ragi
  • 2 Grated boiled potato
  • 1/2 cup Grated paneer
  • 2 Chopped spring onion greens strings
  • 2 Chopped spring onion bulb
  • 2 tsp Chopped garlic
  • 2 tsp Chopped ginger
  • 2 Chopped green chilli
  • Chopped Coriander leaves few
  • Salt as per taste
  • 2 tsp Oil

Instructions

  1. In a mixing bowl take all the ingredients for cutlet except bread crumbs and oil.

  2. In the mixing bowl make a well in the middle and place a small steel bowl.

     

  3. Burn the charcoal till it red and place in the steel bowl.

     

  4. Immediately put few drops oil and 1tbsp green tea on the charcoal and close with a lid completely. Leave for 3-4mins.

  5. Remove the lid and charcoal bowl carefully.
  6.   Now add breadcrumbs to the mixture and make cutlets.

  7. In a nonstick pan fry them with 2tsp oil till both sides turn brown and crispy.

  8. Serve hot with any chutney of your choice.
