Description

Little Millet Rice Nool Putu is a delightful and nutritious South Indian delicacy made from little millet flour, known for its high nutritional value and health benefits. This dish, commonly referred to as string hoppers, features soft, delicate strands of steamed noodles that are light on the stomach and easy to digest. Little millet, a nutrient-rich grain, is an excellent source of dietary fiber, essential minerals, and slow-releasing carbohydrates, making it ideal for maintaining energy levels and supporting overall health. Perfect for breakfast or dinner, Little Millet Rice Nool Putu pairs beautifully with coconut milk, vegetable stew, or spicy chutneys, offering a wholesome, gluten-free alternative that caters to both traditional tastes and modern dietary needs.

  1. Soak both types of rice for 2 hours, then drain the water and let the rice rest on a white cotton cloth for 45 minutes.

  2. Then grind the rice into a fine powder, sift it, and regrind any remaining granules.

  3. Next, in a pan, roast the powder over a very low flame, stirring continuously until it releases a pleasant aroma.

  4. Sift the powder once more, then combine it with warm water, salt, and a spoonful of any oil.

  5. Mix thoroughly to form a dough that is very soft but neither too thick nor too loose.

  6. Press the dough through an idiyappam press and steam it in an idli steamer. Pair it with a smooth and flavorful mixture of coconut milk, cardamom, and palm sugar—kids will love its delicious taste!
